HORSERADISH 
1 c. horseradish cubes
1/2 c. white vinegar
1/4 tsp. canning salt

Trim and wash horseradish roots. Peel off discolored areas. Dice into 1/2 inch cubes.

In blender, add the ingredients consistency or as you like. If too juicy, drain off excess vinegar.

Store in refrigerator.
