CREAMY POTATO PUFF 
1 (8 oz.) cream cheese
4 c. hot mashed potatoes
1 egg, beaten
1/3 c. chopped onion
1/4 c. chopped pimento
Salt and pepper to taste

Combine softened cream cheese and potatoes, mixing until well blended. Add remaining ingredients except pimento. Fold in pimento last. Place in 1-quart casserole. Bake at 350 degrees for 45 minutes. May be prepared ahead of time and put in oven 45 minutes before serving.
