ENCHILADA CASSEROLE 
1 pkg. frozen flour tortillas
1 lb. hamburger
1 pkg. taco seasoning
1 jar enchilada sauce or salsa (mild or hot)
1 med. white onion, diced
1 green pepper, diced
1 sm. can chopped black olives
2 pkgs. shredded Mexican Velveeta cheese
1 can refried beans
Salt & pepper to taste
Lettuce, chopped for topping
Tomato, chopped for topping
Sour cream, for topping

Brown hamburger completely and drain. Thaw tortillas completely. Mix taco seasoning into hamburger according to directions, add all other ingredients except beans and cheese. Heat until simmering. Line bottom of 9"x13" cake pan with tortilla shells, spread beans on shells. Cover with meat mixture, top with cheese. Repeat process until pan is full, ending with cheese on top. Bake at 350 degrees for 15 minutes. Remove, serve with lettuce and tomatoes and sour cream.
