BISQUICK BANANA BREAD OR MUFFINS 
1/3 c. oil
1/2 tsp. vanilla
3 eggs
1/2 c. sugar
1 1/2 c. mashed banana
2 tsp. cinnamon
2 1/2 c. Bisquick
1/2 c. honey

Heat oven to 350 degrees. Grease bottom of loaf pan or use muffin pans with liners. Beat all ingredients vigorously with spoon for 30 seconds. Bake 55 to 65 minutes for loaf pan; 15 minutes for mini muffins; 20 minutes for regular muffins. Cool 5 minutes. Can add mini chocolate chips, nuts or raisins.

So if you don't know how many bananas make a cup and a half, its about 3. Good to know before you start. I used Gluten Free baking mix, omega 3 eggs and pure cane sugar. Agave is also good instead of honey. I wasn't brave enough to use coconut oil yet, but good alternative to oil. And, yes, I added chocolate chips! Hey if Starbucks can do it, so can I! Happy Baking!

So I made a lot of changes to this recipe. I didn't see any need for half a cup of honey and half a cup of sugar. so I didn't use either. I used 1 cup of maple syrup, 2 bananas, the listed amount of vanilla extract, 2 and a half cups Bisquick mix, 3 eggs, 1 tspn of cinnamon and a cup of quick cook oatmeal and before I put them in the oven I sprinkled a tiny bit of fine sea salt over the top.
Taste test: they aren't very sweet. leave off the salt it doesn't improve the taste. maybe add a fourth of a cup of sugar to make it sweeter. might add some finely chopped apple's next time.

I've never made banana bread/muffins before. I had my boyfriend try it first he liked it alot and he doesn't like banana bread. they turned out great. I thought they would be more of a bread texture but they are more like moist cup cakes. I didn't add sugar on top, I thought its perfect as is!

I did this, but I did not end up with the 1 1/2 cup of banana so I shredded some carrots to make up the difference... And I didn't have the vanilla extract but I did have some almond extract... I used half brown sugar and half white... anyway.. OMG! This turned out awesome! A child that won't eat anything ate all the muffins, and the other half of the batter I made into a small loaf. It's almost gone now... :-)

I made muffins and they are delicious. I added 1/2 cup of applesauce to my mashed bananas to equal 1 1/2 cups total. I also baked for 24 minutes. Moist inside and perfect crunch on top!! These are so easy, a definite keeper!! I might put a little chocolate in next time, just trying to keep it healthy...

These are really good and easy to make. The honey takes over the flavor of the banana but still good. The tops got a little crunchy cause I left them in a little longer. This is a keeper. Cheers!

Yum! These are really easy and really good!
I mashed up my 2 over-ripened bananas and found that I only had 1 cup, so I added 1/2 cup of sour cream to the mixture.
