FINNISH BAKED PANCAKE 
3 eggs, room temp.
2 c. milk
1 c. flour
1/2 tsp. salt
2 tbsp. sugar
1/4 c. butter

Beat eggs; add milk, salt, sugar, and add flour last. Melt butter in a 9 x 13 inch pan, put in oven until pan is hot - do not let butter burn - pan has to be hot.

Pour the batter into the pan (over butter). Bake at 375 degrees for about 30 to 35 minutes. Lightly brown and puffy. It's a custard like pancake. Delicious with a lingonberry sauce. Good hot or cold.
