FINNISH OVEN PANCAKE #1 | |
1/4 c. butter 2 eggs 2 c. whole milk or 1 c. whole milk and 1 c. evaporated milk 1 c. all-purpose flour 2 tbsp. sugar 1 tsp. salt Preheat oven to 375 degrees F. Melt butter in two 8 inch pans in hot oven. Teflon or Baker's Secret pans are excellent. A 13x9 pan can be used, but the two round pans are preferred. In a large bowl, with wire whisk, beat eggs and add milk, flour, sugar and salt, beating until mixture is very smooth. Pour batter into the sizzling hot pans and bake for 30 to 40 minutes. Remove from pans as soon as possible to avoid sticking. Makes 8 servings. Pannukakku can be frozen and reheated. Use a microwave oven to reheat. |
