2 lbs. ground beef 2 tbsp. chili powder (or to taste) 1/2 tsp. cayenne pepper (opt. to taste) 2 cloves minced garlic 1 tsp. salt (to taste) 2 (8 oz.) cans tomato sauce 1/2 c. chopped green peppers Corn Bread Batter (below) Heat oven to 350 degrees. Brown beef in 10 inch skillet. Pour off excess fat. Add seasonings and tomato sauce. Spread in 10 inch baking dish. Sprinkle with green pepper. Cover with Corn Bread Batter. Bake 30 to 35 minutes. CORN BREAD BATTER: 1 egg 1 c. + 2 tbsp. milk 1/2 c. flour 1 c. yellow cornmeal 2 tbsp. sugar 3 tsp. baking powder 1 tsp. salt 3 tbsp. butter (butter) Mix ingredients just until mixed and spread over chili mixture. 6 to 8 servings. |
