BAKED BEANS 
1 lb. soldier beans or yellow eye beans
1/4 tsp. parsley flakes
2 tbsp. ketchup
1/2 stick butter
1 1/4 tsp. dry mustard
1/4 tsp. baking soda, plus an additional sm. amount
1/2 c. sugar
1/4 c. maple syrup
2 tsp. salt
1/4 tsp. thyme
1 tsp. ginger

Soak the beans overnight in enough water to cover. In the morning, pour off the water and refill with fresh water. Bring the beans to a boil and simmer until the bean skins split when blown upon. Add a small amount of soda and boil. Skim off the froth. Into a beanpot or casserole dish put the seasonings and other ingredients. Mix well. Pour in the beans; cover with the water in which the beans were boiled. Bake for six hours at 300 degrees.
