CUCUMBER SALAD | |
4 cucumbers, pared, scored & sliced thin 1 sweet onion, sliced thin 1 c. sugar 1 c. water 1/2 c. vinegar 1/2 c. oil Celery seed to taste Place cucumbers and onions in enough salted ice water to cover, let stand 1 hour. Cook sugar and water over low heat until sugar is dissolved. Cool. Add vinegar and oil to cooled sugar syrup and mix well. Drain and rinse cucumber and onion slices. Pour vinegar and oil mixture over them to cover. Sprinkle with celery seed. Refrigerate overnight. Serves 8 to 10. |
