REBECCA'S EASY PINA COLADA CAKE 
1 box yellow cake mix (your favorite)
1/3 cup vegetable oil
1/4 cup water
1 tsp. rum extract
1 (8 oz.) can crushed pineapple
3 eggs

Preheat oven to 375°F. Spray two 8x8-inch or 9-inch pans with non-stick cooking spray (Pam).

In a large bowl beat cake mix, oil, water, rum extract, crushed pineapple (with juice) and eggs with a mixer for 2 minutes. divide batter into pans.

Bake at 375°F for 25 to 35 minutes or until toothpick comes out clean.

Allow to cool completely before frosting.

FROSTING:

1 tub prepared whipped vanilla frosting (your favorite)
1 tsp. coconut extract
1 tsp. rum extract
3/4 cup shredded coconut flakes, for sprinkling

Stir coconut and rum extracts into frosting, spread on cooled cake and sprinkle with coconut flakes.
