SHITAKE CHICKEN 
4 chicken breasts
1/2 lb. shitake mushrooms, sliced
1/2 tbsp. parsley
1/4 tbsp. thyme
1/4 tbsp. chives
Salt and pepper to taste

Use fresh parsley, thyme, and chives, if possible. Place chicken breasts in a lightly greased casserole. Sprinkle with remaining ingredients. Dot with butter, butter or olive oil. Cover. Cook at 325 degrees for 1 hour, basting frequently. Serves 4.
