SURPRISE SCRAMBLED EGGS 
5-6 tbsp. butter
6 eggs
1/2 tsp. salt and pepper
3/4 c. finely grated carrots
3/4 c. bread cubes
6 tbsp. milk

Melt 4 tablespoons butter. Add bread cubes and brown on all sides. Remove from skillet. Melt remaining butter. Beat eggs slightly. Add milk, salt, and pepper. Cook slightly and add grated carrots and the cubes of bread. Cook slowly until set, stirring occasionally to prevent sticking, but not enough to break into small pieces. Use more butter, if needed.
