FLOUNDER - CRABMEAT ROLLS 
2 lbs. flounder fillets or fish of your choice, 8 pieces
1 (4 oz.) can mushrooms, chopped
3 tbsp. onion, chopped
1 (7 1/2 oz.) can crabmeat, drained
1/2 c. whole wheat bread crumbs
1 tbsp. parsley flakes

Combine all ingredients except fish. Spread mixture over fillets and roll up. Place rolls seam-side down in shallow 10 x 2 x 2 inch dish.

SAUCE:

2 1/2 tbsp. cornstarch
1/4 c. apple juice
1 1/2 c. skim milk
2 oz. Mozzarella cheese
Paprika

In a saucepan, combine cornstarch, juice and milk. Heat oven low heat, stirring until mixture thickens. Then add cheese and continue stirring until it melts. Pour sauce over fish rolls; sprinkle with paprika and bake at 400 degrees for 20 to 30 minutes.
