CHICKEN PACELLA 
3 frying chickens, cut into pieces or 4 lbs. mixed chicken parts
Butter
1 med. onion
1/4 lb. sliced mushrooms
2-3 strips pimiento
3 c. chicken stock
5 oz. saffron rice or pkg. flavored rice
1 (10 oz.) pkg. frozen mixed vegetables
1 tomato, sliced
Slivered almonds (opt.)

Brown chicken pieces in heavy frying pan or electric skillet. Remove chicken and set aside. In same skillet, saute onion, garlic and mushrooms. Return chicken and mix with sauteed ingredients. Add pimiento and 1 cup of stock. Cover and simmer 15 minutes. Add rest of stock and simmer 10 minutes. Add uncooked rice, tomato and cover with mixed vegetables. Cook at high temperature for a few minutes and simmer 45 minutes, stirring occasionally. Sprinkle with almonds when serving.
