1 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 c. flour
2 c. quick cooking oats
1 c. nuts
1 c. coconut
2 tsp. vanilla

Combine shortening, white sugar, brown sugar, eggs and vanilla flavoring. Stir in dry ingredients, oats, nuts and coconut. Drop on lightly greased cookie sheet. Flatten slightly with fork.

These cookies could have been called just plain Oatmeal Cookies but I like this name better. It suggests that there is some one special in my life and that I delight in pleasing him. Real home cooking is a happy combination of culinary ability, understanding and love.
