TROPISCHE GEMBERKOEK (TROPICAL
GINGERBREAD)
 
1/2 c. butter
2 eggs
1/2 c. molasses
1 tsp. cinnamon
1/2 c. cold water
1/2 c. sugar
1 tsp. baking soda
1 tsp. ginger
1 1/2 c. flour
2 c. coconut

Cream butter and sugar, add beaten eggs. Dissolve soda in molasses and add to first mixture. Sift dry ingredients and mix altogether. Add 1 cup coconut last (save 1 cup for frosting).

Frosting: Boil 1 cup sugar and 1 cup water without stirring, until syrup forms long thread. Beat 2 egg whites, to which slowly add to the boiling syrup. Add 1 teaspoon orange or lemon extract. Mix 1/2 cup coconut through frosting. Sprinkle rest over the top.
