SHRIMP FETTUCCINE | |
3 lbs. med. shrimp 2 sticks butter 1 tbsp. Polander's chopped garlic 1 oz. lemon juice 1 tbsp. coarse black pepper 4 green onions, chopped 1 tbsp. parsley, chopped 3 oz. sherry 1/4 tsp. nutmeg 1 pt. whipping cream 1/2 pt. light cream Fettuccine noodles, cooked Romano or Parmesan cheese Peel shrimp. In large pot, place shrimp heads and boil for 10 minutes in 2 cups water and 1/2 teaspoon salt. Put shrimp in bowl and strain boiling water onto shrimp. Discard heads and set shrimp aside. In a large saucepan, melt butter. Add garlic and saute until tender. Add lemon juice, pepper, green onions, parsley, sherry and nutmeg. Stir and cook for 5 minutes. In microwave, place whipping cream and light cream and warm for 2 minutes. Add this to the saucepan along with the shrimp and 1/2 cup liquid. Stir and cook for 10 minutes or until shrimp are done. Toss with the fettuccine noodles and serve with the cheese. |
