SKILLET SODA BREAD 
2 c. flour
4 tsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. butter
3/4 c. raisins
1 tbsp. caraway seeds
1 egg
3/4 c. buttermilk

In large bowl mix flour, sugar, baking powder, and salt. Cut in butter, stir in raisins and caraway seeds. Add beaten egg and stir in buttermilk just until the flour is moistened. Turn dough onto well floured surface and knead 10 strokes. Shape dough into 10 inch circle. Cut 6 inch cross 1/2 inch deep and cook in 10 inch skillet over medium heat in skillet with the butter melted. Reduce heat to low. Cover and cook 40 minutes or until bottom of bread is slightly browned. Turn out and cool 10 minutes.
