SKILLET CORN BREAD 
1 1/2 c. corn meal
3 tbsp. flour
1 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
1 1/2 c. milk
1 egg, beaten

Sift together corn meal, flour, baking powder and salt into bowl. Melt shortening in 10-inch oven-proof skillet or 9-inch square baking pan in preheated very hot oven (450 degrees). Add milk and egg to dry ingredients, stirring to combine. Add melted shortening form skillet to batter; mix. Pour batter into very hot skillet or pan. Bake in preheated oven 20-25 minutes.
