SKILLET CORN BREAD 
1 1/2 c. white corn meal
3 tbsp. flour
1 1/2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
1 1/2 c. milk
1 egg, beaten

Sift together corn meal, flour, baking powder and salt into bowl. Melt shortening in a 10 inch skillet (cast iron). Add milk and egg to dry ingredients, stirring to combine. Add melted shortening from skillet to batter and mix. Pour batter into very hot skillet. Bake in a preheated oven at 450 degrees for 20-25 minutes.
