TURNIP GREENS 
3 lbs. fresh turnip greens
1/3 lb. salt pork, sliced
1 tsp. salt
1/2 tsp. black pepper
1 fresh hot green or red pepper pod
3 c. water

Wash greens well several times. Roll together several leaves and slice thin until all greens are sliced. In a large Dutch oven pot, slice salt pork and saute over medium heat until fat is rendered. Remove salt pork from pot with a slotted spoon; add greens, salt, pepper, and water. Cover. Bring to a brisk boil, then lower heat and simmer for 1 1/2 hours. Serves 6.
