RICOTTA PIE 
6 eggs
Pinch of salt
Enough flour to make stiff dough

Beat eggs. Mix all together. Roll dough out, put in a deep baking pan or 9 inch layer cake pan (round).

FILLING:

Mix together: 1/4 c. flour 2 tbsp. grated orange peel 2 tbsp. grated lemon peel 1 tbsp. vanilla 1/8 tsp. salt

Beat 4 eggs then gradually add 1 cup sugar and beat until eggs are thick and lemon colored. Stir beaten eggs in ricotta mixture. Pour into pastry crust. Bake at 350 degrees for 50-60 minutes until firm. When cool sprinkle with 2 tablespoons of powdered sugar.
