SPINACH RICOTTA PIE 
1 qt. chopped spinach
1/2 c. chopped onion

Place in small saucepan, cook 5 minutes or until tender. 3/4 c. Ricotta (can use low fat) 1/2 tsp. dried basil leaves, crushed 1/2 tsp. dried oregano leaves, crushed 3/4 c. chopped tomato 2 tbsp. grated cheese 4 slices chopped Swiss cheese 1/4 tsp. salt 1/8 tsp. pepper 1/8 tsp. garlic powder

Beat cheeses and seasonings in bowl. Stir in cooked onions and spinach. Add tomato. Bake 15-20 minutes. Serve with crackers or bagel chips.
