SPINACH RICOTTA PIE 
Your favorite pie crust recipe
1 lb. ricotta cheese
3 beaten eggs
1 pkg. frozen chopped spinach
1 sm. onion, diced
3 tbsp. flour
1/2 c. grated or diced sharp cheese

Mix everything together, blending very well. Spread into unbaked pie shell. Bake 45-55 minutes at 375 degrees.
