CHICKEN CORDON BLEU 
2 to 4 chicken breasts, boned and split
4 slices baked or boiled ham, cut in half
4 slices cheese, cut in half (Swiss or Monterey Jack)
4 tbsp. melted butter
1/2 c. Cheddar cheese cracker crumbs
2 tbsp. butter

Pound each breast between 2 sheets of waxed paper until thin. Place a slice of ham and cheese on each breast. Folding the edge in, tightly roll each breast jelly roll style and secure with toothpick. Dip in melted butter, then roll in cracker crumbs. Set the chicken rolls in baking dish and dot with remaining butter. Cover and cook 12 to 15 minutes on medium high or level 7 in microwave. Serves 4 to 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
