CHEESE AND SPINACH PUFFS 
1 (10 oz.) pkg. frozen chopped spinach
1/2 c. chopped onion
2 slightly beaten eggs
1/2 c. grated Parmesan cheese
1/2 c. shredded Cheddar cheese
1/2 c. Blue cheese salad dressing
1/4 c. butter, melted
1/2 tsp. garlic powder
1 (8 1/2 oz.) pkg. corn muffin mix

In pan, mix spinach and onion. Cook according to package directions. Drain well. Mix eggs, cheeses, salad dressing, butter and garlic powder. Add spinach mixture and muffin mix. Cover and chill in refrigerator. Shape dough into one-inch balls and chill until serving time. Then place balls on baking sheet and bake at 350°F until light brown (about 10 to 12 minutes). Serve warm.
