EMELIA'S FRUIT AND CARROT CAKE 
3 lb. carrots, peeled and cut sm.
1 lg. Delicious apple, peeled and cut sm.
1 banana, peeled and sliced
1 orange, peeled and cut into pieces
3/4 c. corn oil
3 eggs
1 c. sugar
1 tsp. vanilla
3 c. all purpose flour
3 tsp. baking powder
1 c. shelled walnuts
1 c. raisins

Preheat oven to 375 degrees. Place carrot, apple, banana, orange, oil, eggs, sugar, and vanilla into blender. Blend on shred speed for 3-5 minutes. In a large bowl place in flour and baking powder; mix well. Add the mixture from the blender into the flour and mix well. Add nuts and raisins. Mix well. Pour into a greased bundt pan. Bake 45 minutes. Check if done by inserting a clean knife or toothpick into enter. If it comes out clan, the cake is done. If not, bake for 5 more minutes. Makes 8-10 servings.

NOTE: Can use a cream cheese frosting if desired.
