PEPPERMINT COOKIES 
1 1/2 c. white sugar
1 c. butter
2 eggs, plus 1 yolk
1/2 tsp. salt
1 tsp. vanilla
4 c. sifted flour
1 tsp. baking soda
1 c. crushed peppermint stick
1 c. walnut meats, cut up

Cream sugar and butter together. Add eggs and vanilla. Sift together dry ingredients and add to creamed mixture. Add peppermints and nuts. Roll into balls size of a walnut and flatten with bottom of glass which has been dipped in flour. Bake at 350 degrees about 12 minutes. May frost with frosting made with butter, boiling water and confectioners' sugar.
