CHOCOLATE PEPPERMINT COOKIES 
3/4 cup softened butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1/6 teaspoon peppermint oil
1 3/4 cups all purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 to 1/2 teaspoon salt
1 1/2 cups of chocolate chips

Preheat oven to 350°F.

In large mixing bowl beat together butter and sugars. Add peppermint oil, vanilla, and egg. In separate bowl mix together flour, cocoa powder, baking soda, and salt. mix flour mixture into wet mixture, and add chocolate chips.

form dough into tablespoon sized balls, place on slightly greased cookie sheets, and bake for 10 minutes.

when done let sit on sheet for 1 minute then move to cooling racks.

These cookies have a great taste but did not turn out for me at all. I plan to try again today and will post any modifications. The batch I baked following the recipe is as thin as my cookie sheet

I am not a Mint Chocolate person nor am I a huge cookie fan, but These are AWESOME!! I used these cookies as part of my Holiday Baking and sprinkled a little bit of crushed candy cane on top, to make them look the part but they are a winner with or with out!

These are AMAZING! I did change a couple things, but not because I thought anything was wrong. I only used 1 cup of chocolate chips because I had tiny ones and a cup just looked like enough. Also, I had peppermint extract and I didn't know if that was the same thing and I just sort of added it to the final product until it smelled pepperminty. We are leaving them for Santa tonight!
