AMISH APPLE PIE 
STREUSEL:

1/3 c. granulated sugar
1/4 c. brown sugar
1/2 c. plus 2 tbsp. flour
1 tsp. cinnamon
1 tsp. nutmeg
1/2 c. (1 stick) butter, cold
1/2 c. coarsely chopped walnuts
4 lg. apples, McIntosh or Granny Smith (4 c.)
1 unbaked 10 inch pie shell
1 c. granulated sugar
3 tbsp. flour
1/2 tsp. cinnamon
1 egg
1 c. whipping cream
1 tsp. vanilla

In a food processor, combine streusel ingredients. Add butter and process until mixture is crumbly, it should look dry. Don't over process. Add nuts and set aside. Preheat oven to 350 degrees. Peel, core and thinly slice apples; there should be 4 cups. Place apples in pie shell. In small bowl, mix sugar, flour and cinnamon. Beat egg in a medium bowl and add cream and vanilla. Add sugar mixture and blend. Pour over apples. Bake 1 hour in lower 1/3 of oven. After 20 minutes, sprinkle streusel over top and continue baking approximately another 40 minutes until top puffs and is golden brown.
