PUMPKIN APPLE STREUSEL MUFFINS 
2 1/2 c. flour
2 c. sugar
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves
1 tsp. baking soda
2 eggs
1 c. pumpkin
1/2 c. vegetable oil
2 c. chopped apples

In large bowl combine first 6 ingredients. In medium bowl combine remaining 3 ingredients. Add liquid to dry mixture; stir just until moistened. Stir in apples.

Spoon into muffin tin. Sprinkle with streusel topping. Bake in 350 degree oven 35-40 minutes.

STREUSEL TOPPING:

2 tbsp. flour
1/4 c. sugar
1/2 tsp. cinnamon

Cut in 4 tablespoons butter until mixture is crumbly.

These muffins freeze extremely well. They are an all-time family favorite!
