1/2 lb. fresh mushrooms 1/4 c. green or yellow onions 1 tbsp. butter 3 eggs 1 c. half and half (may substitute low-fat milk) 1/2 tsp. salt 1/8 tsp. pepper 2 c. grated Swiss cheese (may use part Mozzarella) (If desired, you may add frozen, chopped spinach. Squeeze out juice before adding to mixture.) Saute mushrooms and onions in butter. Beat eggs, half and half, salt, and pepper. Add mushroom and onion mixture and cheese. Bake at 350 degrees for 35 minutes. |
