SPICY ITALIAN LASAGNA 
1 sm. onion, chopped
3 cloves garlic, minced
2 tbsp. olive oil

Saute above ingredients in a large pot.

Add to above ingredients until browned. Add the following to above ingredients: 8 oz. can tomato sauce 6 oz. can tomato paste 2 c. shredded fresh spinach, chop and shred with knife 1 1/2 tsp. oregano 1/2 to 1 tsp. red pepper flakes (optional) 1/4 c. dry red wine (Burgundy) 2 tbsp. red wine vinegar

Fold in all ingredients. Boil 10-12 lasagna noodles, following cooking directions. Drain and rinse.

Mix together in separate bowl: 15 oz. ricotta cheese 1 egg, slightly beaten

Layer in a large casserole oblong dish the following ingredients, starting with meat and sauce on bottom: noodles, cheese mixture, meat, sauce, seasonings, salt, pepper, and Parmesan cheese. Bake at 375 degrees for 40 minutes (bubbling). Cool 10 minutes, serve with garlic bread. Serves 8-10.
