QUICK FRUIT COBBLER 
1 stick butter
1 (16 to 20 oz.) can fruit, any canned fruit is good
1 c. flour
1 c. sugar
1 c. buttermilk
1 tsp. salt
1/4 tsp. baking soda
2 tsp. vanilla
1/2 tsp. almond extract
1 tsp. lemon juice or 1/2 tsp. lemon extract
Cinnamon and sugar

Melt 1 stick butter in Pyrex baking dish, 9 x 13 or larger. Pour in can of fruit. Mix together flour, sugar, buttermilk, salt, soda, vanilla, extracts, and pour over fruit evenly. Sprinkle over the top some cinnamon sugar and bake about 1 hour or until golden brown at 350 degrees. Serve hot with vanilla ice cream.
