RICE CROQUETTES 
2 1/2 c. cooked rice
1 c. grated American cheese
1/2 c. butter or shortening
1/2 c. chopped pimiento
1 tbsp. chopped onion
1/8 tsp. salt and paprika
1 tsp. baking powder
1 egg, beaten well
1/2 c. buttered bread crumbs

Mix all well and mold into balls and fry in hot fat until brown.
