BARLEY CASSEROLE 
1 stick butter
1 c. barley
1 medium onion
1 c. almonds
1 pkg. onion soup
1 can mushroom pieces and juice
1 can water chestnuts (drained)
2 cans chicken broth

Brown onions and barley in butter. Add all other ingredients. Stir well. Put in casserole, cover and bake 1 hour at 350°F.

This freezes nicely. Make ahead and put in plastic bag.

Bake as needed.
