EASY MEATLOAF 
2 1/2 lbs. ground beef
1 egg
1 cup milk
3/4 cup bread crumbs
2 peeled and grated carrots
1/2 cup onion, chopped
3 tbsp. chopped parsley
2 tsp. salt
chopped parsley
tomato wedges
thin slice carrot
celery sprigs

Place beef in large bowl. In separate bowl, beat egg and milk. Stir in crumbs, carrots, onion, parsley and salt. Add mix to beef and mix well.

Grease shallow pan. Shape beef mixture in loaf.

Note: If you wet hands with water, it will be easier to shape.

Bake at 350°F for 60 to 70 minutes until meat is cooked.

For garnish, sprinkle with parsley on top, tomato wedges, carrots and celery around.
