SAUTEED CAULIFLOWER 
1 head (1 lb.) fresh or 1 pkg. (10 oz.) frozen cauliflower
2 tbsp. oil
1/4 tsp. thyme
3/4 tsp. vinegar
1/2 garlic clove, minced
Dash pepper
2 tsp. minced parsley or 1 tsp. dry parsley flakes

Break cauliflower into small flowerettes and cook or steam in unsalted water until just tender, 10-12 minutes; or cook frozen cauliflower according to directions on package, omitting salt. Drain.

Combine and heat oil, thyme, vinegar and garlic in a large pan or skillet over moderate heat 5 minutes. Add drained cauliflower, sprinkle with pepper and stir gently. Simmer until hot. Sprinkle with parsley just before serving. Makes 4 servings. 75 calories per serving.
