SKILLET CORN BREAD | |
1/3 c. butter 1 1/4 c. cornmeal 3/4 c. flour 1 tbsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1 egg, slightly beaten 1 c. milk Melt butter in heavy 9 inch cast iron skillet, in oven while preheating to 400 degrees. In a large bowl mix cornmeal, flour, baking powder, sugar and salt; stir in egg and milk. Carefully tilt skillet to coat with butter and pour the rest into cornmeal mixture. Stir just to blend. Pour into hot skillet. Bake about 20 minutes or until golden and springy to the touch. Cut in 8 wedges, serve hot. |
