VARIABLE CREAM PIE 
2/3 c. sugar
3 tbsp. cornstarch (or flour level)
1/4 tsp. salt
1/4 c. cold milk
2 egg yolks
1 3/4 c. milk
1 tbsp. butter
1 tsp. vanilla

Mix sugar, cornstarch and salt. Add 1/4 cup cold milk; mix. Add egg yolks; mix. Add 1 3/4 cups milk. Cook until thick. Add butter and vanilla.

VARIATIONS:

Use white sugar, lemon juice and 1 teaspoon lemon rind. Use egg whites for topping.

MERINGUE TOPPING:

2 egg whites
1/4 tsp. salt

Beat until fluffy. Add slowly 1/4 cup sugar and your choice of flavoring. Spread over pie and bake 350 degrees until golden brown.
