SCRAMBLED EGG CASSEROLE 
3 tbsp. all-purpose flour
2 tbsp. butter
2 c. milk
1/4 c. chopped green onions
3 tbsp. butter
1 c. shredded cheddar cheese
1 lb. bacon, crisp fried, crumbled
12 eggs, scrambled
1 (4 oz.) jar button mushrooms
Salt & pepper to taste
1/2 c. buttered bread crumbs
Paprika

Combine flour and 2 tablespoons butter in saucepan. Stir in milk. Cook until thickened, stirring constantly. Saute green onions in 3 tablespoons butter in skillet. Add cheese. Stir until melted. Add bacon, eggs, mushrooms, salt and pepper; mix well. Pour into buttered 9"x12" casserole. Top with bread crumbs; sprinkle with paprika. Refrigerate overnight. Preheat oven to 350 degrees. Bake for 30 minutes. Yield: 8 to 10 servings.
