COLLARD GREENS 
2 ham hocks
2 lbs. greens
1 onion, chopped
1 tbsp. soul food seasoning
1 tsp. crushed peppers

Pick greens and discard discolored leaves and stems. Wash thoroughly. Cook ham hock in Dutch oven for about 1 hour then add greens, onion and seasonings. Cover. Cook on low for 1 1/2 hours until done.
