RHUBARB DESSERT 
2 c. crushed graham crackers
1/4 c. sugar
1/2 c. butter
4 c. rhubarb
2 c. sugar
1 (3 oz.) pkg. red Jello
2 c. miniature marshmallows
1 c. whipped cream

Melt butter; add crackers and sugar. Press into bottom of 8 x 12 pan. Top with rest of ingredients. Cook rhubarb, add sugar and Jello. Cool to lukewarm. Add marshmallows, let set for 15 minutes or so. Add whipped cream and pour into pan. Chill until firm.

For nice red color use cherry or raspberry Jello. May also use Rich Whip or Cool Whip in place of the whipped cream.
