FLAKY PASTRY 
4 c. sifted flour
2 tsp. salt
1 1/3 c. shortening
8 to 10 tbsp. iced water

In large bowl, stir together flour and salt. Using pastry blender, cut in shortening until coarse crumbs form. Sprinkle iced water over crumb mixture a little at a time, tossing with fork until dough forms. Divide dough into fourths. Firmly press each fourth into a ball and flatten slightly. On lightly floured surface with floured rolling pin, roll out two pieces of dough to 14 inch circles. Roll out remaining two pieces to 11 inch circles. Use as directed. Makes pastry for two (9 inch) double - crust, deep - dish pies.
