MICROWAVE CARROT CAKE 
1 1/2 c. sugar
1 c. cooking oil
1 tsp. vanilla extract
3 eggs
1 1/2 c. flour
3/4 tsp. salt
1 1/4 tsp. baking soda
2 1/2 tsp. cinnamon
2 1/4 c. raw grated carrots
1/2 c. chopped walnuts

In a large mixing bowl blend sugar, oil and vanilla. Add eggs and beat well. Sift together flour, salt, soda and cinnamon. Add to sugar-egg mixture and mix. Fold in carrots and nuts. Pour batter into a 12 x 8 x 2 inch greased microwave-safe baking dish. Microwave at high 13 to 15 minutes, rotating dish 1/2 turn every 4 minutes. Stop as soon as cake begins to pull away from edge of the dish.

This cake is good with the traditional cream cheese frosting, or you an just top each piece with a spoon full of orange marmalade.

Since microwave ovens vary in power, you may need to adjust your cooking time.
