OVEN FRIED CHICKEN 
1/4 c. butter
1/3 c. flour
2 eggs
Salt to taste
1 tbsp. paprika
2 tbsp. lemon juice
1 c. cracker crumbs
2-1/2 lb. chicken, cut up (or little larger)

Place butter in a 9 x 13 x 2 inch baking dish and melt in 350 degree oven. Flour chicken pieces and set aside. Beat together eggs, salt, paprika, and lemon juice. Dip chicken, one piece at a time in cracker crumbs. Arrange in baking dish in the butter, skin side down. (Chicken may be skinned before using.) Bake 45 minutes to 1 hour in 350 degree oven. Turn once. This may also be used to oven fry pork chops.

Good! Fast, Easy! Enjoyed mine with ranch dipping sauce and bbq sauce! I had chicken finger size and only needed to cook the 45 min. and they were very juicy!
