CHEDDAR-APPLE PIE 
5 c. peeled and finely sliced apples
1/2 c. sugar
1/8 tsp. salt
1/2 tsp. ground nutmeg
1 1/2 tbsp. butter
3 (1 oz.) slices of cheddar cheese, cut in triangles

Arrange slices of apples in pastry shell. Combine sugar, salt, and nutmeg; sprinkle over apples. Dot with butter.

Cover top of pie with pastry. Trim off excess pastry along edges; fold edges under and flute. Cut slits in top crust to allow steam to escape.

Bake at 450°F for about 30 minutes; reduce heat to 350°F and bake 10 minutes. Some ovens are hotter - you may want to cover edges of pastry with foil to pervert excessive browning.

Garnish with cheese triangles while pie is hot.

Yield: one 9 inch pie.
