HEARTY POTATO SOUP 
4 med. potatoes, peeled
1 med. onion, sliced
4 c. boiling water
1/3 c. diced summer sausage
1/2 tsp. thyme
1/2 tsp. marjoram leaves
1 1/2 tsp. salt
Pepper
2 tbsp. butter
1/2 c. grated sharp cheese
1 tbsp. Parmesan cheese

Cut potatoes in halves. Cook with onion in 2 cup boiling water, until tender. Do not drain. Mash potatoes. Add sausage, thyme, marjoram, salt, pepper, butter, sharp cheese and remaining boiling water. Simmer 10 minutes. Add grated cheese just before serving. 6 servings.
