HEARTY QUICK POTATO - CHEESE
SOUP
 
6 to 8 med. potatoes
1/2 c. celery
1/2 c. onions
8 slices American cheese
1/2 tsp. salt
1/2 tsp. pepper
4 chicken bouillon cubes
1 qt. water
1 qt. milk

Dice potatoes in small cubes and put into boiling water. Cook until soft. Mash with potato masher. Add celery, onions, salt, pepper, bouillon and milk. Reduce heat to 200 degrees or very low and add cheese. Do not boil or cheese will clump.

ALTERNATIVE: Use broccoli flowerettes in place of the potatoes for broccoli soup.
