HEARTY POTATO SOUP 
3 c. diced, peeled potatoes
2 c. water
1 tsp. salt, or to taste
3/4 c. chopped onion
2 tbsp. butter
2 tbsp. flour
2 c. milk
1 tsp. parsley flakes
1/4 tsp. pepper

Bring potatoes, water, and salt to boil in medium-size pan. Reduce heat; cover and simmer until tender. Without draining, mash until the size of peas.

Meanwhile, in large pan, cook onions in butter until translucent. Sprinkle with flour. Cook and stir 1 minute. Gradually stir in milk and cook, stirring frequently, 5-7 minutes until simmering and thickened. Stir in potato mixture and remaining ingredients. Makes 4 generous servings.
